What did I make for dinner, you ask?... Okay, you didn't ask, but I wanted to shout it from the rooftops that I actually made dinner (besides something entirely out of a box). Well, last night, I made Parmesan Crusted Chicken Dijon, and a couple nights before that, I made Pesto Cheese Ravioli with Chicken. All the kids ate it and loved it, except Casse, who says that everything is very yucky (unless it's bananas, yogurt, cheese, or gum, although I don't really think gum is a food group).
This all started late last week, when my friend, Christine, and I went to our first "Dream Dinners" workshop. It's a place where you assemble all your meals ahead of time (without four children underfoot) and then bring them home to store in your freezer. It was awesome and I cannot stress enough how much I dread cooking. I love to eat, but I don't like cooking it, that's all there is to it. Just because I'm a girl, doesn't mean I should automatically love to cook. Anyhow, Christine talked me into trying this place. It's a little pricey and we were kind of hoping we wouldn't really enjoy ourselves too much since it seems expensive, but let me tell ya..... we were absolutely GIDDY in there! We had so much fun, it was so simple, and they had great customer service. Now that we've tried a couple of the meals, too, which are delicious and pretty healthy, we are justifying the you-know-what out of doing this again! Not only do I save time shopping for all the ingredients, paying for all the spices, seasonings, meat, etc, but it's all done in two hours (for the entire month!) with a great friend by your side. Not to mention saving my sanity, too! And at the end of the day, I feel like I actually did something good for my family... except Casse who goes to bed hungry at least five nights out of the week, but she'll grow out of it, just like the boys did, I'm sure.
So now the hard part is trying to decide on what I want to pull out of the freezer next; will it be the Grilled Salmon with Lemon & Garlic Butter, the Kung Pao Chicken, the Mango Glazed Pork Chops... the list goes on my friends, the list goes on.
Wow, I never thought I would blog about cooking, that's for sure! And just in case nobody believes me, here's some photos to prove it!

OH I love that place. I went there for just a party and got to make one meal. It was so fun and easy and they are so nice. It will be a good month of eating at your house. (Maybe I should come visit.) What does Billy think?
Yeah! Sounds like great fun!! I would love to hear more about it!! That is actually one of the things that I love about food...to prepare a good, healthy meal requires something (whether it be time, money or both). So when it is done and served, there is a joy in presenting it as a gift to your family (even if it is not received that way!!!) =) Happy Freezer!!!
Billy seems to like the ones that we've had so far. The ravioli one was his favorite, of course, since there's cheese. I'm doing another one tonight, so we'll see.
I had a blast! The Kung Pao Chicken has been our favorite so far. I really wish I had the recipe for the sauce. It was heavenly, if that's possible!
I am pretty jealous of all your lovely meals. It's chicken tonight in our house!
